I decided to combine the delicious desserts of carrot cake and cheesecake into one making a carrot cake cheesecake. The bottom is the carrot cake and the top is the cheesecake. I never had the confidence to make a cheesecake until December when I made a Banana Bread Cheesecake and it turned out so delicious that I knew that I wanted to keep trying more and more cheesecake recipes. For the base of this recipe, I used my Carrot Cake Banana Bread recipe. It is whole-grain, moist and delicious. These savory and delectable muffins are wonderful for a holiday breakfast. These gluten free muffins contain bacon, eggs, cheese, bell peppers inside a hash brown crust. So scrumptious! INGREDIENTS 20 oz. bag refrigerated Simply Potatoes shredded hash browns 1 tbsp. olive oil 1 tsp. sea salt 1/2 tsp. ground black pepper 2 cups Fiesta blend cheese divided use 12 oz. pkg. Rath bacon cooked and crumbled into bite-sized pieces 9 extra large eggs divided use 1/2 cup red bell pepper diced 1/2 cup orange bell pepper diced parsley 1/2 cup 2% milk or cream INSTRUCTIONS Preheat oven to 400°. Spray 24 muffin tins with cooking spray. Combine one egg with hash browns, olive oil, 1 cup cheese and half each of the salt and pepper. Easy Candy Bar Poke Cake Recipe

When I was a younger, I remember drooling over Poke Cake. It was always a family favorite, and there’s a reason why. Poke cakes are moist, sweet and addicting. The fun thing about this kind of cake, is you can make it your own. I decided to name this my Easy Candy Bar Poke Cake Recipe, because you can use YOUR favorite cake recipe and candy choice.  If you are a chocolate fan, swap out the caramel sauce for chocolate and the yellow cake for chocolate cake.   INGREDIENTS 1 box yellow cake mix and any ingredients required to make it 1 (14 oz) can sweetened condensed milk 1 (8 oz) jar caramel topping 1 (8 oz) container cool whip 4 Heath Candy Bars chopped INSTRUCTIONS Bake cake according to directions in a 9x13 baking pan. NO BAKE OREO CHEESECAKE

The hubby has been a cheesecake fan for as long as I remember so he was very excited we were making it on one of our last photo shoot days. Things had already started warming up that day so it was very nice to be making a treat that required no baking. And the treat was made even better since it involved OREOS – everyone’s favorite cookie. INGREDIENTS 48 Oreos (1 package) 1/2 cup butter melted 32 oz cream cheese softened 4 packages) 3/4 cup sugar 1 tsp vanilla 8 oz cool whip or whipped cream INSTRUCTIONS Crush all Oreos in large Ziploc bag or in food processor (1/3 crumbs to go in cheesecake and to sprinkle on top). INGREDIENTS 4 large eggs 1 1/4 cups Double-Dutch Dark Cocoa or Dutch-process cocoa 1 teaspoon salt 1 teaspoon baking powder 1 teaspoon espresso powder 1 tablespoon vanilla extract 1 cup (2 sticks) unsalted butter 2 1/4 cups sugar 1 1/2 cups King Arthur Unbleached All-Purpose Flour 2 cups chocolate chips INSTRUCTIONS Preheat the oven to 350°F. Lightly grease a 9" x 13" pan Crack the 4 eggs into a bowl, and beat them at medium speed with the cocoa, salt, baking powder, espresso powder, and vanilla for about 1 minute, or until smooth. You can do this while you're melting your butter (next step). In a medium-sized microwave-safe bowl, or in a saucepan set over low heat, melt the butter, then add the sugar and stir to combine.
